When 2 elements are in saltire I use to see the element bendwise more times under than over the other element. But being bendwise more important than bend sinisterwise I decide, time ago, to emblazon the element bendwise over by default.

The coat of arms of Iker Lanzagorta Ochoa, designer, and manufacturer of wooden furniture. This coat of arms has been designed by him, his father Juan Lanzagorta Vallín, and me, and emblazoned by me. An interesting heraldic discussion arose from this design. Someone suggested that two metal charges placed in saltire violate the rule of tincture because one metal lies over another. However, two charges arranged in saltire necessarily intersect and touch. Colouring one charge to avoid metal on metal would simply create a colour-on-colour problem against the field. This illustrates that the rule of tincture cannot be interpreted in such a purely mechanical way.
